It has a broth like consistency (rassa) and it made with freshly pureed tomatoes and crushed garlic, with basic spices. tinde tamatar tastes great with roti but it tastes mind-blowing with rice. Ingredients
  • Tinde / Apple gourd - 250 grams
  • Potatoes - 1 medium, diced (optional)
  • Tomatoes - 1 & ¼ cup, freshly pureed
  • Garlic - 1 tsp, coarsely crushed in mortar and pestle
  • Curry leaves - one sprig
  • Green chilies - 1
  • Coriander leaves - a handful
  • Oil - 2 tbsp
  • Cumin seeds - ¾ tsp
  • Turmeric - ¼ tsp
  • Red chili powder - ¾ tsp or to taste
  • Coriander powder - ½ tbsp
  • Garam masala - a pinch or two
  • Salt - to taste
  • Water - 2 cups
Instructions
  1. To make tinda curry recipe, start off by rinsing and peeling the tinde. Slit them as shown in the pic below. You may dice them instead if you wish.
  2. Heat oil in a pressure cooker and add cumin seeds. Let them sizzle.
  3. Add the crushed garlic and saute on low heat until fragrant.
  4. Add the freshly pureed tomatoes and saute until the oil separates and the raw smell of the tomatoes is gone.
  5. Add salt and ground spices; turmeric, red chili, coriander. Saute for a minute.
  6. Add the tinde and the curry leaves. If you are adding potatoes, add them at this stage. Saute well for a few minutes. Sprinkle water if the mixture sticks to the bottom of the cooker.
  7. Add water to make a thin broth. Give it a stir.
  8. Pressure cook the tinde for 4-5 whistles or until they are done.
  9. When the pressure releases, open the cooker and turn the heat back on. Add coriander leaves and a pinch or two of garam masala.
  10. Tinda curry recipe is ready. Serve hot with roti and rice. Enjoy!

Rinse and peel the tinde. Slit them as shown in the pic below. Soak them in water until ready to use, else they will turn dark.
