Also known as Jhinga Biryani (झींगा बिरयानी) and Kolambi Biryani (कोलंबी बिर्याणी) in Hindi and Marathi respectively, this is a quick fix lunch if you are craving for some delicious seafood dish. This recipe doesn’t call for any fancy ingredients such as ghee, saffron, dry-fruits, or fried onions for garnish.

Made in groundnut oil, this prawns biryani recipe has a typical nutty aroma. Using minimal whole spices ensure that the prawns have dominate the overall flavour profile of the biryani. The prawns biryani gravy is made with yogurt, onions, tomatoes, and ginger-garlic. Substitute for Khandeshi Garam Masala

Khandeshi garam masala consists mainly of dried red chilies (byadgi & guntur variety) and coriander seeds. The other whole spices are used in smaller, varying proportions. Using khandeshi garam masala for this prawns biryani is highly recommended because the rest of the ingredients are chosen according to the taste and heat of the masala. If at all you want to use a substitute, you may use any other variety of Maharashtrian garam masala of your liking.

Ingredients
More Marinating the Prawns
  • Saltwater prawns - 600 grams after shelling & cleaning
  • Salt - to taste
  • Turmeric powder - ½ tsp
  • Ginger - 1-inch piece
  • Garlic - 3 tbsp
  • Green chilies - 5
Other Ingredients for Prawns Biryani
  • Aged basmati recipe - 1 & ½ cup, soaked for 30 mins then drained
  • Groundnut oil - ½ cup
  • Onions - 3 medium, finely chopped
  • Tomatoes - 2 medium, pureed
  • Black peppercorns - ½ tbsp
  • Green cardamoms - 8
  • Khandeshi garam masala - 2 & ½ tbsp (recipe here)
  • Salt - to taste
  • Hot water - 3 cups or as needed depending on the rice
  • Coriander leaves - a big handful
  • Mint leaves - a big handful
Instructions
  1. To make prawns biryani recipe, start off by pounding together ginger, garlic, and green chilies in a mortar and pestle. Add it to the prawns along with the turmeric, and salt.
  2. Cover the prawns and let them rest in the fridge for 30 minutes. In the meanwhile, prepare the rest of the ingredients.
  3. Heat half of the groundnut oil in a heavy-bottom pot or handi/degchi. Add in the black peppercorns and green cardamoms.
  4. Once the spices fluff up, add the onions and saute for a minute.
  5. Add the marinated prawns and mix. Cover and cook on low heat for 15 minutes so that the flavours of the prawns comes out. Mix once in between.
  6. Then add the pureed tomatoes and saute until the raw smell of tomatoes goes away.
  7. Make a well in the center if the handi/pot and add the remaining oil.
  8. Once the oil is warm, add the khandeshi garam masala.
  9. Saute the masala on low heat until fragrant.
  10. Mix the masala with the prawns and saute for a minute.
  11. Add the basmati rice and saute it with the masala for 2-3 minutes. Sprinkle some water if the mixture looks dry.
  12. Add the hot water and bring it to a boil. Adjust salt at this stage.
  13. Let it bubble away until you see water drying up and holes developing on the surface of the biryani.
  14. Cover the handi/pot with a tight fitting lid and turn the heat to low. Cook the biryani for 10 minutes.
  15. Switch off the heat and let the biryani rest for another 5-6 minutes.
  16. Then uncover the handi/pot and fluff up the biryani with the back of the spoon. Add the chopped coriander leaves and torn mint leaves.
  17. Give it a gentle mix. Prawns biryani recipe is ready. Serve hot with raita or salad. Enjoy!

To make prawns biryani recipe, start off by preparing the prawns. You will need 600 grams of saltwater prawns (the weight is measured after the prawns are shelled and cleaned), 1-inch ginger, 3 tbsp garlic, and 5 green chilies, 1/2 tsp turmeric, and salt to taste.

Step 2

Pound together the ginger, garlic, and green chilies in a mortar and pestle. Combine it with the prawns, turmeric, and salt.

Gather the ingredients for the prawns biryani recipe. Soak 1 & 1/2 cups of aged basmati rice in sufficient water for 30 minutes. Then drain the rice.

Heat 1/4 cup groundnut oil in a heavy-bottom pot or handi/degchi. Add in 1/2 tbsp black peppercorns and 6 green cardamoms.

Once the spices fluff up, add 3 medium onions finely chopped and saute for a minute.

    What a terrific recipe! I must admit, Monica, that being a North_Indian with very little experience with Marathi cuisine, I was skeptical.
