There was a terrific sandwich place near my workplace where I frequented with my co-workers to have delicious, hot and freshly made sandwiches. It is the place where I came across the very special and much-loved Mumbai masala toast sandwich.

This sandwich was very filling and comforting. I love potatoes and this one has a savory filling made with boiled potatoes. Besides, the sandwich is loaded with raw veggies like capsicum, onions, and beetroot. The crunch from the vegetables compliments the soft and warm potato filling really well. The cheese and butter only make it better. The sandwich sellers in Mumbai have a special kind of toaster. They pack the sandwich in the toaster and keep it on the stove and turn it occasionally so that the sandwich would get toasted evenly on both sides.

Luckily, I was able to find the toaster easily. I bought the Anjali brand of non-stick sandwich toaster at a local shop selling kitchenware. I personally feel that toasting this sandwich on the tawa is better. Ingredients
For the potato filling
  • Potatoes - 3 medium, boiled and peeled
  • Oil - 1 tbsp
  • Cumin seeds - ½ tsp
  • Mustard seeds - ½ tsp
  • Salt - to taste
  • Turmeric - ¼ tsp
  • Curry leaves - 7-8, torn with hand
  • Green chilies - 3 or to taste
  • Coriander leaves - a handful, finely chopped
Vegetables for the filling
  • Beetroot - 1 medium, boiled and thinly sliced
  • Tomatoes - 1 medium, sliced
  • Onion - 1 medium, sliced
  • Capsicum - 1 medium, sliced lengthwise
Other ingredients
  • Bread - 10 to 12 slices
  • Butter
  • Cheese of your choice
  • Mint chutney
  • Sandwich masala
Instructions
  1. To make the mumbai masala toast recipe, start off by making the potato filling. Heat oil in a pan or kadhai. Add the mustard seeds and let them crackle. Add the cumin seeds and let them sizzle.
  2. Toss in the curry leaves and green chilies and saute for a few seconds.
  3. Add the turmeric and give it a quick stir.
  4. Toss in the potatoes and coriander leaves. Season it with salt. Mix well. Mash the potatoes well.
  5. Potato filling is ready.
  6. To assemble the mumbai masala sandwich, take two slices of bread and apply butter on them.
  7. Apply mint chutney on both the slices.
  8. Spread some potato filling on one of the bread slices.
  9. Top the potato filling with two slices of tomato and onion each. Sprinkle a generous dash of sandwich masala.
  10. Place a couple of beet root slices and a few pieces of capsicum. Sprinkle some more sandwich masala.
  11. Grate some cheese over the veggies.
  12. Pack the sandwich with the other buttered slice of bread.
  13. Apply butter on the inside of the sandwich toaster.
  14. Place the sandwich in the toaster.
  15. Pack the toaster.
  16. Toast the sandwich on both sides on high to medium flame until golden and crispy.
  17. Take the sandwich out on a plate. Carefully cut it into four pieces. Mumbai masala toast recipe is ready.
