However, lemon rice tastes so good that you will find yourself making fresh rice especially for preparing this incredibly simple and easy lemon rice recipe. When it comes to food, I have grown up enjoying food from several cuisines; South Indian being one of them. South Indian food is nourishing, flavorful, and very easy to prepare.

Since lemon rice recipe is quick and easy to make, and tastes even better after a few hours, you can prepare it for kid’s lunchbox too. The preparation for lemon rice is anything but elaborate. A few tempering ingredients and some lemon juice to taste is all you need to make the lemon rice mix. Then just toss in some rice and garnish it with cashews and peanuts and you have yourself some delicious, fragrant lemon rice ready to be enjoyed!

This is the Andhra style lemon rice is known as Nimmakaya Pulihora in Telugu. Some like to prepare it with basmati rice. I like surti kolam rice better for this recipe. You may use basmati rice if you prefer. Whatever rice you use, make sure it is aged so that you get fluffy, separated grains. Lemon rice is an easy recipe of rice tossed in a fragrant tempering, finished with lemon juice, and garnished with cashews and peanuts. It has a crunch from the fried urad dal and chana dal and a very peculiar tang from the lemon that makes the rice so unique and pleasing to the taste buds.

Ingredients
  • Cooked white rice - 5 cups (I have used aged surti kolam)
  • Oil - 2 tbsp
  • White urad dal (skinned & split black gram) - 1 tbsp
  • Chana dal (split bengal gram) - 1 tbsp
  • Mustard seeds - ¾ tsp
  • Cumin seeds - ½ tsp
  • Asafoetida - ⅛ tsp
  • Whole dried red chilies - 3, cut up into small pieces
  • Curry leaves - 15 leaves
  • Ginger - 1 inch, grated
  • Green chilies - 4, finely chopped
  • Turmeric - ⅛ tsp
  • Lemon juice- 2 tbsp or to taste
  • Coriander leaves - 2 tbsp, finely chopped
  • Peanuts - 3 tbsp
  • Cashews - 3 tbsp
  • Salt - to taste
Instructions
  1. To prepare South Indian lemon rice recipe, start off by heating oil in a skillet. Fry the peanuts until they are golden and nutty. Remove them onto a plate.
  2. Next, toss in the cashews and fry them until golden. Remove them onto a plate too.
  3. In the remaining oil, add the mustard seeds and let them splutter.
  4. Then add the cumin seeds an let them sizzle. Add the asafoetida.
  5. Add in the white urad dal/skinned & split black gram and the chana dal/split Bengal gram. Saute them on low heat until they turn golden.
  6. Toss in the dried red chilies and curry leaves torn with hand. Saute for a few seconds until the curry leaves turn crispy.
  7. Add the green chilies and ginger and saute until fragrant.
  8. Turn the heat off. Add some salt and 1 tbsp lemon juice to season the tempering ingredients. There is salt in the cooked rice already so don't add a lot of it to the tempering.
  9. Add the cooked rice, turmeric, and the remaining tbsp lemon juice. Mix well.
  10. Finish off the lemon rice with coriander leaves. Give it a final mix.
  11. Serve the Andhra style lemon rice and garnish it with fried cashews and peanuts. Enjoy!

Start off by 2 tbsp heating oil in a skillet. Fry 3 tbsp peanuts until they are golden and nutty. Remove them onto a plate.

Next, toss in 3 tbsp cashews and fry them until golden.

In the remaining oil, add 3/4 tsp mustard seeds and let them splutter. Then add 1/2 tsp cumin seeds an let them sizzle. Add 1/8 tsp asafoetida.

Add in 1 tbsp white urad dal/skinned & 1 tbsp split black gram and the chana dal/split Bengal gram. Saute them on low heat until they turn golden.

Toss in 3 dried red chilies cut up into small pieces and 15 curry leaves torn with hand. Saute for a few seconds until the curry leaves turn crispy.

Add 4 finely chopped green chilies and grated 1-inch piece of ginger and saute until fragrant.

Turn the heat off. Add some salt and 1 tbsp lemon juice to season the tempering ingredients. There is salt in the cooked rice already so don’t add a lot of it to the tempering.

Add 5 cups of cooked rice, 1/8 tsp turmeric, and the remaining 1 tbsp lemon juice. Mix well. I have used aged surti kolam rice.

Finish off the lemon rice with 2 tbsp finely chopped coriander leaves. Give it a final mix.
