Idli soaks up the flavors of the manchurian gravy really well. You may use leftover idli or make fresh idli. However, if you are making fresh idli, make sure it cools down completely before you proceed to deep-fry it. If the idli is hot and moist, it will break apart while frying and soak up a lot of oil.

Ingredients
For Preparing the Idli
  • Idli - 16, cut into quarters
  • Corn starch - 2 tbsp
  • Oil - for deep-frying
For Making the Manchurian Sauce
  • Oil - 2 tbsp
  • Onion - 1 cup, chopped
  • Capsicum - ½ cup, chopped
  • Garlic - 3-4 tbsp, minced
  • Ginger - 1-inch piece, grated
  • Green chilies - 5, slit
  • Spring onion greens - ½ cup
  • Light soy sauce - 2 tbsp
  • Ketchup - 1 tbsp
  • Red chili sauce - 2 tbsp or to taste
  • Schezwan sauce - 2 tbsp (recipe here)
  • Lee Kum Kee's Black Bean Garlic Sauce - 1 tsp (optional)
  • Vinegar - ½ tsp
  • Salt - if needed, to taste
  • MSG/Ajinomoto - 1 tsp (optional)
  • Cornstarch slurry - ½ tsp cornstarch mixed with ¼ cup water
Instructions
  1. Take idli in a wide bowl and dust it with cornstarch. Toss well to cover the idli with the cornstarch evenly.
  2. Heat oil in a skillet and carefully drop in a batch of idli. Fry it on high heat for a few seconds. Then turn the heat to medium and fry the idli stirring it often until it is golden and crunchy.
  3. Take the fried idli out on a plate lined with kitchen towel.
  4. Fry the remaining idli in batches the same way.
  5. Now let's prepare the manchurian gravy, Heat a wok or a skillet on very high heat. Add in the oil, onion, ginger, and garlic. Saute for a minute stirring constantly until the garlic becomes fragrant. Do not let the garlic turn golden.
  6. Next, toss in the capsicum and green chilies. Saute till the capsicum turns tender but still has a crunch to it.
  7. Add MSG/Ajinomoto. MSG is optional.
  8. Tip in all the sauces; light soy sauce, schezwan sauce, ketchup, red chili sauce, and vinegar. If you are adding black bean and garlic sauce, add it now. It will enhance the taste of the manchurian gravy a lot.
  9. Give it a quick stir. Check salt at this stage, add some if needed. Add in the cornstarch slurry and cook it for a few seconds. The sauce will thicken and develop a gloss.
  10. Add in the fried idli pieces and give them a toss.
  11. Garnish the idli manchurian with spring onion greens.
  12. Idli manchurian recipe is ready. Serve hot. Enjoy it as an appetizer, snack or as a meal.

To make idli manchurian for 4 to 5 people, we need 16 idlis cut into quarters. You could use leftover idli or make fresh idli and let it cool completely. You will also need 2 tbsp cornstarch.

Step 9

Next, toss in 1/2 cup chopped capsicum and 5 slit green chilies. Saute till the capsicum turns tender but still has a crunch to it.

Add MSG/Ajinomoto. MSG is optional.

Tip in all the sauces; 2 tbsp light soy sauce, 2 tbsp schezwan sauce, 1 tbsp ketchup, 2 tbsp red chili sauce, and 1/2 tsp vinegar. If you are adding black bean and garlic sauce, add 1 tsp of it now. It will enhance the taste of the manchurian gravy a lot. I like the idli manchurian tangy and hot. You may adjust the quantity of sauces as per your liking.

Give it a quick stir. Check salt at this stage, add some if needed. Add in the cornstarch slurry made with 1/2 tsp cornstarch mixed with 1/4 cup of water. Cook it for a few seconds.

    A big thumbs up to this recipe. I bought the black bean sauce for the first time and I thought it was strange but after trying it for a few times I have started to enjoy it. And this recipe came out really well. My family loved it a lot.

      Hi Sneha.You can find it on Amazon India. It’s Lee Kum Kee brand. There are two variants; The black bean sauce is much lighter. I have used garlic and black bean sauce, which is quite pungent.
