Beans and lentils are an important part of home-cooked Indian food. Mixed sprouts are a very popular choice of many Indians because they are so healthy. Personally, I do not like to buy mixed sprouts from the market because of hygiene issues. You can make your own mixed bean sprouts at home very easily.

I have used four kinds of dry beans in equal ratio to make the mixed bean sprouts – peas (vatana), moth beans (matki), whole green moong (sabut moong), and black chickpea (kale chane). You can change the ratio as per your liking; adding more beans that you like or even skipping the ones which you don’t. The process of sprouting remains the same for all kinds of beans, only the duration varies. For example, moong bean takes one day to sprout while kala chana takes twice as long.

When you are making mixed sprouts at home, they will need two days to sprout evenly. You can use these mixed bean sprouts to make a salad, pulao, or mixed sprouts curry. Now let’s see how to make mixed sprouts.

Ingredients
  • Green moong beans / Sabut hare moong - ¼ cup
  • Dried peas / Sukhe matar / Vatane - ¼ cup
  • Black chickpeas / Kale chane - ¼ cup
  • Moth beans / matki - ¼ cup
  • Water
Instructions
  1. Combine the green moong beans, dried peas, black chickpeas, and moth beans in a bowl.
  2. Rinse them well and soak them in sufficient water for 8-9 hours or overnight.
  3. Drain the beans and rinse them once or twice to freshen them.
  4. Line a bowl with a thin cotton cloth. Place the beans on the cloth.
  5. Gather the corners of the cloth and tie them together, not to tight though. The beans need some space so that they can sprout nicely.
  6. Turn the tied bundle upside down and sprinkle some water all over it.Keep it in a warm place for 2 days. Sprinkle water on the cloth every few hours so that the beans don't dry up.
  7. After 2 days, the beans have tripled in volume, i.e. 3 cups. The sprouts are ready to use. Use them within 1-2 days. Keep them refrigerated until you use them.
