The right amount of garlic coupled with other elements of the recipe that are meticulously eyeballed takes the Indian curries to a whole new level. The same goes for Indian flatbreads too; naan to be specific as of now. I had previously shared a naan recipe, which is a very basic one topped with just some sesame seeds and fresh coriander. It is a yeast-free naan recipe. And so is this one; Garlic naan recipe without yeast.

The garlic naan recipe will use the same dough as that of the plain naan. The naan dough is leavened using baking soda. It is kneaded with yogurt and warm milk. It’s not possible for home-cooks to make the typical tandoori naan because we don’t have tandoors at home. So we will make this garlic naan on tawa instead and trust me, the results would be outstanding. The naan is soft, bubbly on the inside because the dough is perfectly leavened, and it just melts in your mouth. The garlic gets roasted over the direct flame of the gas, the earthiness of which makes this naan recipe irresistible.

Garlic naan recipe - An easy way to prepare soft, melt-in-mouth naans on tawa or stove top. These are restaurant-style naans with flavor of garlic and richness of butter.

Ingredients
For Making 5 garlic Naans
  • Naan dough - Recipe here
  • Some water
  • All-purpose flour for dusting
Toppings for the Naan
  • Garlic - 5 tbsp, minced
  • Salt - to season the garlic
  • Coriander leaves - 2 tbsp
  • Sesame seeds - 1 tbsp
  • Butter - softened or melted
Instructions
  1. To make the garlic naan without yeast, season the minced garlic with salt, a fat pinch or to taste. Let it rest for 10 minutes. In the meanwhile, preheat an iron tawa.
  2. Divide the naan dough in 5 portion. Take a portion and roll it gently in dry all-purpose flour.
  3. Place it on the rolling board and roll it out into an oval.
  4. Hold one end of the naan gently with your finger tips and pull the other end to elongate the naan. This will also elongate the gluten strands in the dough and make it more flexible.
  5. Now sprinkle some sesame seeds, salted garlic, and chopped coriander leaves over the naan and roll it once.
  6. Carefully lift the naan and flip it. Apply some water to the backside of the naan.
  7. Now pick the naan carefully and place it on the hot tawa so that the watered side is down. It will make the naan stick to the tawa.
  8. Let the garlic naan cook over low heat for 40 seconds. You will see some bubbles forming on top.
  9. Now pick the tawa and turn it upside down. Turn up the heat and cook the top of the naan over direct heat. Keep some distance between the naan and the fire. Move the tawa over the fire so that the entire naan gets uniformly cooked.
  10. Scrap the garlic naan off the tawa with a metal spatula.
  11. Place it on the wire rack and brush it with butter.
  12. Garlic naan without yeast is ready. Serve hot with your favorite curry. Enjoy.
