Chilli chicken recipe (चिल्ली चिकन रेसिपी) is one of the gems of the Indo-Chinese cuisine, sought-after dish at most Chinese restaurants in India. It is must-have choice on the menu and the puff of admiration around it is justified. Succulent, juicy bits of batter-fried chicken tossed in a hot sauce with predominant flavors of soy sauce and heat of green chilies – just the thought of it makes your mouth water. To make a good chilli chicken, you need to be generous with the garlic. It’s nice biting into the tiny bits of garlic.

For making chilli chicken, you can use chicken breast. However, I feel that chicken breast recipes have a typical whiff which kind of rescinds the flavor of the dish. So, I like to use a mix of chicken thighs and breast. To make the chicken tenderer, soak it in the brine. The most basic brine usually serves the purpose. Overnight brining works great for larger chunks of chicken for curries. When you cut the chicken into bite-sized pieces, a couple of hours are enough. The chicken doesn’t dry up upon frying. If you look at it, the inactive preparation time is around 1.5 hours because of the brining process. Once that’s done, the frying would take about 30 minutes and stir-frying less than 10 minutes. So basically, you end up spending just an hour or so in the kitchen to make this delicious and easy chilli chicken. Trust me; it would be totally worth it. Ingredients
To Brine the Chicken (Optional but highly recommended)
  • Chicken – 400 grams
  • Water – 1 cup
  • Sugar – 1 tsp
  • Salt – 1 tsp
  • Vinegar – ½ tsp
To Make Batter for the Chicken
  • Plain flour / maida – ⅔ cup
  • Cornstarch – ⅓ cup
  • Baking soda – ⅛ tsp
  • Water - ⅔ cup
  • Black pepper – 1 tsp
  • Ginger garlic paste – 1 tbsp
Oil – for deep frying
    To Prepare the Sauce
    • Oil – 3 tbsp
    • Spring onions whites – ¼ cup
    • Spring onion greens – 2 tbsp + some for garnish
    • Garlic – 1& ½ tbsp, minced
    • Ginger –1/2 tbsp, minced
    • Green chilies – 2 or to taste, split lenght wise
    • Onion – 1 medium quartered and layers removed
    • Mixed bell peppers – 1 cup
    • Corn starch slurry – ½ cup water mixed with 1 tsp of cornstarch
    • Soy Sauce – 2 tbsp
    • Vinegar – ½ tbsp
    • Teriyaki sauce – 1 tbsp
    • Sugar – ¾ tsp
    • Salt – to taste
    • Black pepper – ½ tsp
    • Ajinomoto – ½ tsp
    • Sesame seeds – as needed, for garnish
    Instructions
    1. For preparing the chicken brine, combine sugar, salt, vinegar and water in a bowl. Mix well.
    2. The chicken brine is ready. Add bite-sized pieces of chicken and give it a stir. Refrigerate the chicken for 1.5 hours.
    3. Drain the chicken and discard the brine.
    4. To make the batter for the chicken, add fresh water, ginger-garlic paste, black pepper and baking soda to the drained chicken. Give it a quick stir.
    5. Add cornstarch and plain flour and mix well. The thick batter should coat the chicken well.
    6. Heat oil in a skillet to deep-fry the chicken. Drop in the chicken pieces with a fork and fry on medium-high heat for 3-4 minutes till they are light golden. The chicken would be half done.
    7. Let the chicken rest for 20 minutes. I have kept the batches separated so that the next step would be easier.
    8. Fry the first batch of chicken for the second time on medium high heat for 3-4 minutes till crispy and golden brown. This gives the other batches the time to rest and cool down. Move on to the second one and so on.
    9. For making the sauce, heat oil in a skillet or wok on a very high flame. Add spring onion whites and stir-fry for a few seconds.
    10. Add minced ginger and garlic. Sauté for a few seconds till fragrant.
    11. Add mixed bell peppers, green chilies split lengthwise and onion cut in layers. Stir-fry for a minute.
    12. Pour in the cornstarch slurry and bring it to a boil.
    13. Season with salt, black pepper, sugar and, MSG to balance the taste.
    14. Add vinegar and soy sauce. Toss well.
    15. Add teriyaki sauce and mix. Let the sauce thicken. Turn off the flame and let the sauce stand for 3-4 minutes
    16. Add the fried chicken and spring onion greens and give it a quick toss.
    17. Chilli chicken is ready. Garnish with some more spring onion greens and sesame seeds. Serve immediately. Enjoy!

    Restaurant-Style Chilli Chicken Recipe with Step by Step Pictures Below


    Step 1

    Start by brining the chicken. You will need 400 grams boneless chicken cut into bite-size pieces, 1 tsp sugar, 1 tsp salt, 1/2 tsp vinegar and 1 cup of water in a bowl. Brining the chicken is optional but highly recommended.

    Combine water, vinegar, sugar, and salt in a bowl.

    The chicken brine is ready. Add in the chicken and give it a stir. Refrigerate the chicken for 1.5 hours.

    Drain the chicken and discard the brine.

    To make the batter for the chicken, you will need 1/3 cup cornstarch, 2/3 cup plain flour, 2/3 cup cold water, 1 tbsp ginger-garlic paste, 1 tsp black pepper, 1 tbsp oil, and 1/8 tsp baking soda.

    Step 6

    Combine all the ingredients for the batter and whisk well. Add in the drained chicken. The thick batter should coat the chicken well.

    Step 7

    Heat sufficient oil in a skillet. Drop in the chicken pieces with a fork and fry on medium-high heat for 3-4 minutes till they are light golden. The chicken would be half done.

    Let the chicken rest for 20 minutes. I have kept the batches separated so that the next step would be easier.

    Step 9

    Fry the first batch of chicken for the second time on medium high heat for 3-4 minutes till crispy and golden brown. This gives the other batches the time to rest and cool down. Move on to the second one and so on.

    While the chicken was brining, I did the preparation for the remaining ingredients for the chicken chilli recipe.

    Those are the garnish ingredients; 2 tbsp spring onion greens and some roasted sesame seeds.

    Step 12

    Heat 3 tbsp oil in a skillet or wok on a very high flame. Add 1/4 cup spring onion whites and stir-fry for a few seconds.

    Add 1/2 tbsp minced ginger and 1 & 1/2 tbsp garlic. Sauté for a few seconds till fragrant.

    Step 14

    Add 1 cup mixed bell peppers, 2 green chilies split lengthwise and 1 medium onion cut in layers. Stir-fry for a minute.

    Pour in the cornstarch slurry that has been made with 1/2 cup water and 1 tsp cornstarch. Bring it to a boil.

    Add salt to taste, 1/2 tsp black pepper, 3/4 tsp sugar and 1/2 tsp MSG to balance the taste.

    Add 1/2 tbsp vinegar and 2 tbsp soy sauce. Toss well.

    Add 1 tbsp teriyaki sauce and mix. Let the sauce thicken. Turn off the flame and let the sauce stand for 3-4 minutes.

      Vinegar completes the taste of the chicken. It’s just enough for that and wouldn’t cause the chicken to taste sour.

    Very nice recipe. One of my favorite dish . I am planning to prepare it very soon . I have only one question,

    If I don’t put teriyaki sauce, what difference will it make ? As this sauce is sweet.

      Hi Anuva. Teriyaki is slightly sweet and umami. You can do one thing. Combine 1/2 tbsp oil, 3 tbsp light soy sauce soya sauce, 3 tbsp rice vinegar or regular white vinegar, and 3 tbsp honey in a small pan. Mix well and bring it t a boil. Let it simmer until it thickens. Use it in the chicken chilli recipe as per your taste preference. Its taste is very close to teriyaki sauce that you get it stores. I hope this helps.
