Chicken Dum Biryani Recipe – An easy biryani recipe with layers of basmati rice, and chicken cooked in a delicious gravy, garnished with raisins and saffron, then slow-cooked in a sealed pot.

Biryani is an all-time favorite of Indian foodies and we would forever be appreciative to the Mughals who introduced us to this culinary wonder to the world. A delicious biryani has a good meat to rice ratio. The kind of rice can make or break the biryani recipe. Aged, long-grained and fragrant basmati rice is an ideal choice. If you ask me, I prefer Lal Qilla basmati rice. The combination of biryani spices, both whole and ground is a differentiating factor between the different kinds of biryani. Today’s chicken dum biryani recipe is a very light and easy preparation.

Light & Simple Chicken Biryani Recipe

This chicken dum biryani (चिकन दम बिरयानी) is a really good recipe to begin with for those who have never cooked a biryani before. You can say this is a toned-down version of the Hyderabadi Chicken Biryani, which is a very fancy dish requiring lots of ingredients, time, and efforts. This would be an excellent choice if you have to cook for a bigger crowd, because not only it’s easy but also finger-licking delicious.

The spices are used very conservatively. Like I said, this chicken dum biryani recipe is a very simple one. It doesn’t call for any fancy garnishing ingredients; no fried onions, no ghee/clarified butter, no coriander leaves, and no nuts. All you need is some saffron for color and raisins for the mild sweetness.

Another noteworthy thing about the chicken biryani is that it’s a Pakki Chicken Biryani. Pakki means cooked. The chicken gravy is cooked separately. The rice is cooked until done separately. These two elements are then layered in another pot and then cooked on dum. Dum cooking involves sealing the biryani pot with a tight-fitting lid and letting it simmer on a very low flame so that the flavours develop and infuse even more.

You might notice that the amount of oil is greater than usual. That’s because you have to refrain from adding any water to the chicken gravy. The chicken and spices need to be cooked well and hence you need enough oil to saute them well.

This Chicken Dum Biryani is the simplest biryani recipe wherein the meat and rice are layered in a pot and cooked on dum. Since the chicken curry for the biryani is cooked separately, it is also known as pakki biryani.

Ingredients
For Making the Chicken Curry
  • Chicken - 500 grams, brined (Brining is optional but recommended, check method here)
  • Onions - 2 cups, finely sliced
  • Tomatoes - 1 cup, finely chopped
  • Mint leaves - ½ cup
  • Ginger - 1-inch, julienned
  • Garlic - 10 cloves, finely crushed
  • Green chilies - 6 or to taste
  • Yogurt - ¼ cup, whisked
  • Lemon juice - ½ tbsp or to taste
  • Kewra water - ½ tsp to ¾ tsp, as per your liking
  • Red chili powder (Tikhalal) - 1 tsp
  • Red chili flakes - 1 tsp
  • Coriander powder - 1 tsp
  • Salt - to taste
  • Sunflower oil - ½ cup
  • Whole Spices
  • Cumin seeds - 1 tsp
  • Cinnamon - 1-inch piece
  • Green cardamom - 5
  • Black cardamoms - 2
  • Nutmeg - ¼ tsp, crushed
  • Bay leaves - 2
  • Cloves - 4
  • Black peppercorns - 25 (1/2 tsp)
  • Mace - 1
Other Ingredients
  • Saffron - 30-35 strands soaked in 1 tbsp hot water
  • Raisins - ¼ cup, fried in ghee
For Making the Rice
  • Basmati rice - 1 & ¼ cup
  • Water - 3 cups or as needed depending on your rice
  • Salt - to taste
  • Oil - ½ tbsp
Instructions
  1. To make chicken gravy for biryani, start off by heating oil in a handi or a heavy-bottom pot. Add in the sliced onions and saute until they start to turn golden.
  2. Add in the crushed garlic and julienned ginger and saute until fragrant.
  3. Next, add in the chicken and the whole spices.
  4. Add the ground spices too; Tikhalal red chili powder, coriander powder, and chili flakes. Saute until the chicken turns white.
  5. Turn the heat to low and add in the whisked yogurt. Saute until the yogurt vanishes to form gravy and oil begins to separate.
  6. Add the kewra water, tomatoes, torn mint leaves, and green chilies. Mix well. Saute until the tomatoes soften. The chicken already has some salt in it from brining. Add more salt if needed.
  7. Cover and cook on low heat until the chicken is done.
  8. While you prepare the chicken gravy on one side, cook the rice on the other. Both the things need to be ready at the same time.
  9. Bring the water to a boil in a pot and add in the rice, oil, and salt.
  10. Cook the rice on medium-high heat until you see holes developing on the top. There is some water left.
  11. Turn the heat to low and cover the pot and cook the rice in the remaining water until it's done. I needed 7- minutes. Turn the heat off and let the rice stand for 10 minutes.
  12. Uncover the pot and fluff up the rice with the back of the spoon.
  13. The chicken curry will be ready by this point. Add lemon juice to it and give it a final mix. Now it's time for making layers for the biryani.
  14. Take a biryani pot and grease it. I have a wide aluminum pan that I use to cook the biryani on dum.
  15. For pakki biryani, the rice should be on the bottom-most layer. Spread ¼ of the cooked rice evenly across the base of the pan.
  16. Spread the entire chicken curry on the layer of rice. Also add half of the fried raisins.
  17. Spread the remaining ¾ of the cooked rice over the layer of chicken gravy. Add the remaining half of the fried raisins. Also, spread the saffron infused water across the layer of rice.
  18. Preheat a iron tawa/griddle on high heat. Then turn the heat to low. Place the biryani pot over the preheated tawa. Cover it with a tight-fitting lid. Place a heavy mortar Let it cook for 15 minutes.
  19. Turn off the heat. Let the biryani rest for 5 minutes.
  20. Uncover the biryani pot. Give it a gentle mix.
  21. Transfer the biryani to a serving dish. Serve hot with some raita. Enjoy!

Brine 500 grams chicken for 4-5 hours and then drain it. Discard the brine. You can check the method of brining here. Soak 1 & 1/4 cup basmati rice for 30 minutes. Drain the rice.

To make chicken gravy for biryani, start off by heating 1/2 cup sunflower oil in a handi or a heavy-bottom pot. Add in 2 cups sliced onions and saute until they start to turn golden.

Add in the 10 cloves of crushed garlic and 1-inch julienned ginger and saute until fragrant.

Next, add in the chicken and the whole spices; 1 tsp cumin seeds, 2 bay leaves, 1-inch piece of cinnamon, 5 green cardamoms, 2 black cardamoms, 1/4 tsp crushed nutmeg, 1/2 tsp or 25 black peppercorns, 4 cloves, and 1 mace.

Step 6

Add in the ground spices; 1 tsp red chili flakes, 1 tsp red chili powder (tikhalal), and 1 tsp coriander powder. Saute until the chicken turns white.

Turn the heat to low and add in 1/4 cup whisked yogurt. Saute until the yogurt vanishes to form gravy and oil begins to separate.

Add 1/2 tsp – 3/4 tsp kewra water, 1 cup finely chopped tomatoes, 1/2 cup torn mint leaves, and 6 green chilies split lengthwise. Mix well. Saute until the tomatoes soften. The chicken already has some salt in it from brining. Add more salt if needed.

Cover and cook on low heat until the chicken is done.

When the chicken is cooked through, add 1/2 tbsp (or to taste) lemon juice.The chicken gravy for biryani is ready.

While you prepare the chicken gravy on one side, cook the rice on the other. Both the things need to be ready at the same time. Bring 3 cups of water to a boil in a pot and add in 1 & 1/4 cup basmati rice, 1/2 tbsp oil, and salt to taste. Adjust the amount of water depending on your rice.

Cook the rice on medium-high heat until you see holes developing on the top. There is some water left.

Turn the heat to low and cover the pot and cook the rice in the remaining water until it’s done. I needed 7- minutes. Turn the heat off and let the rice stand for 10 minutes.

Uncover the pot. You can see the rice is perfectly cooked.

Now it’s time for making layers for the biryani. Take a biryani pot and grease it. I have a wide aluminum pan that I use to cook the biryani on dum.

For pakki biryani, the rice should be on the bottom-most layer. Spread 1/4 of the cooked rice evenly across the base of the pan.

Spread the entire chicken curry on the layer of rice. I have 1/4 cup of raisins fried in clarified butter. Add half of the fried raisins at this point.

Spread the remaining 3/4 of the cooked rice over the layer of chicken gravy. Add the remaining half of the fried raisins. I have soaked 30-35 strands of saffron in 1 tbsp hot water. Spread the saffron infused water across

Preheat a iron tawa/griddle on high heat. Then turn the heat to low. Place the biryani pot over the preheated tawa. Cover it with a tight-fitting lid. Place a heavy mortar Let it cook for 15 minutes.
