Let me tell you briefly how baby potato fry that are crispy. The recipe starts with boiling the baby potatoes until they are well done. You do not have to peel the baby potatoes. To make them crispy on the outside and soft on the inside, we need to fry these baby potatoes with skin. The potatoes are gently squished between the palms to flatten them. Then, they are finally deep fried.

To make the skin of the baby potatoes crisp, we need to fry them twice. That’s the trick for making crispy fried potatoes that most people don’t know about. When that’s done, the fried baby potatoes are seasoned with salt, red chili powder, coriander powder, and amchur/dried mango powder. These small potato fry are so spicy and tangy, you just can’t resist them once you have a taste.

I have added salt to the potatoes while boiling them. Then I have added some more salt to the oil while frying them. This ensures that the potatoes are well seasoned and don’t taste bland on the inside.

Ingredients
  • Baby potatoes - 400 grams
  • Oil - for deep frying
  • Byadgi red chili powder - 1 tsp
  • Tikhala red chili powder - ½ tsp
  • Amchur powder / dried mango powder - ¾ tsp
  • Coriander powder - ¾ tsp
  • Salt - to taste
Instructions
  1. To make baby potato fry, rinse potatoes well to get rid of the mud stuck to it.
  2. Transfer the potatoes to a pressure cooker and add sufficient fresh water to it. Add some salt too.
  3. Pressure cook the potatoes for two whistles. Let the pressure subside on its own.
  4. Remove the potatoes on a plate and let them cool down until you can handle them comfortably. Gently press the potatoes between the palms of your hand to flatten them. The skin will crack at some places.
  5. Heat sufficient oil in a kadhai/skillet. Add some salt to it so that the potatoes absorb the salt. Drop in the baby potatoes and fry them until golden. I have fried the potatoes in two batches.
  6. Take them out on a plate and let them rest for 10 minutes. In the meanwhile, fry the remaining potatoes.
  7. Now it's time to fry the potatoes for the second time. Make sure the oil is hot. Drop in the baby potatoes into the hot oil and refry them until they turn crispy. This may take a few minutes.
  8. Take the fried baby potatoes out on a plate lined with kitchen towel. Refry the remaining potatoes the same way.
  9. Transfer them to a bowl and season them with more salt, byadgi red chili powder, Tikhala red chili powder, coriander powder, amchur / dried mango powder.
  10. Give it a toss.
